As a local specialty, sour meat is actually pickled meat. Making sour noodles is usually in the winter lunar month. The raw ingredients are mainly pork head meat, pork hands, and pork belly. Put the pork head flesh and bone, burn the skin with charcoal, wash, add salt, grass fruit, peppercorns, octagonal and other seasonings, and cook the pork to eight or nine. Then add the cooked bud valley noodles and shredded radish, put the pork head, sour noodles, salt, pepper, pepper, stir well in a pot, and marinate in a pot can be marinated for 2 months to eat.
